    If I backup texts and contacts and other device data on my Pearl, is it tranferable via the backup file to a curve? Or is there a different process to this?

    Yes it is. However, it's probably a better choice to use the Desktop Manager, which has an option to change devices. DM will check the configuration of each device and make only appropriate transfers (An example: if you are switching from a polyphonic device to monophonic, it will not transfer the .mid ringtones, whereas just a backup/restore will) and also will transfer 3rd party applications. But a backup/restore works too, if the switchover is not complicated or the devices are very close in age/OS!
