Hmm, well I am going to assume you mean 3rd party apps, not native pre-installed ones like browser, email, and maps. This is tough, I don't want to waste my three apps on things I can do via the browser like twitter and facebook.

Dolphin Browser: since the Android browser does not have desktop emulation/user agent mode...I use this daily to avoid being forced to the mobile version of some sites.

Astro File Manager: great file manager, with tons of tools and options

Screebl: allows you to control screen timeouts based on the position/angle of your Droid.

I have 120+ apps, thank goodness this was just hypothetical

Oh wow! Just flipped through all my apps and thats a painful situation. But here goes...

    Droid Live- Best radio period.

WebSharing- Transfer ALL FILES over WIFI faster than a USB. Cannot live without.

ExZeus- I know right, a game?! But I just had a boss battle with a 3 headed metal beast that rivals my damn xbox!! LMAO

    What a wicked question!

    Tough choice, let's see
Floating Image - beautiful slideshow for showing off my son
Note Everything - backs up notes to sd card for when I wipe for a new rom
Overclock Widget - gives my mt3g that extra boost for multitasking
Proof of absence is not absence of proof.

How do one disable the default sms when using Handset sms, so that I don't get duplicate sms?

I don't think you can disable the native messaging app but you can disable the notificiations within the app itself.

My best 3. ChompSMS, Gesture Search and Beautiful Widgets!
    As Always...

    Happy Berrying!!

You can set a desktop user agent in the default browser. If you navigate to "about:debug" (in the address bar) you'll enable browser debug mode -- this won't navigate off of the current page. Once debug mode is enabled, there's a new "UAString" option at the bottom of settings. It can be set to "Android" (the default, mobile user agent), "iPhone" (self explanatory), or "Desktop".

On both of my devices (Google Ion, Moto Droid), this sets a user agent string that is very close to the Apple Safari desktop user agent.
