What is a Level 1 message
I am setting up profiles and do not know what these are.
You can use "Level 1" messages to set certain messages to be received as "high priority" and provide a different alert to those types of messages.
They are also PIN messages.

Haha I was way off I always thought level 1 messages were bes email account emails. Learn something new everyday on this site ~via smartphone~
While PIN messages are Level 1 by default, this can be turned off.

This gives YOU control of what messages are important rather than relying on the sender to set the message to a High Priority.
The point being that you can set any message to Level 1 - either by subject or sender or message content, and you can set what happens when you receive a Level 1 message under Profiles.
I have all messages coming from my wife and children, as well as very specific emails (three subject filters) from work set to Level 1. No matter which profile I'm using - even Quiet, I know when messages from them come in!
