    "Manage Connection" option...

Ok I guess I'm just missing what is supposed to happen.

Under the "Manage Connections" Option the Mobile Network said At&T and I have Tmobile. I went in and changed it to tmobile but At&T kept coming up. Would or should that effect my phone in anyway?

its just telling you what network you are connected to.

I would wager you are in an area that TMo doesn't cover but has worked out with att to let you roam on their towers. I wouldn't worry.

When I went to Iowa I was connecting to all sorts of different companies.

Just select WiFi Preferred so if you are connected to a WiFi network, it will get better signal using UMA.
