Sentiment. This can get touchy... How can you honour someone with the launch of an iPad or whatever mundane object, here today, gone tomorrow ? Steve Jobs is far more than a mere commercial reason. He was a great man. Needs to be revered. Not marketed.
Edit: let me add: Apple (for that matter all of us) need to remember him. Yes. But not use his name, or his birthday, to launch a product.

It's going to be a iPad3. Nothing else. There is no market for a 7" iPad.
The Kindle Fire is a completely different market. When it comes to tablets, the size is perfect. Apple creates the market and since they haven't released a 6-7" iPad yet. There is no market. How many Flyers have sold.... yep... that many.
Being released on Jobs B-day isn't a bad thing. He created this market, releasing this on his B-Day is marketing. He would have done something similar.
