does it do any "damage" internally do go from jb to un several times on the same device? you know, back and forth? I would assume not and this is probably a stupid question so I apologize in advance

No it wort hurt it,I couldn't tell you how many times I've had to restore and rejailbreak my touch

NOPE!! You'll be fine, when I first got my iPod Touch and attempted a Jailbreak, I literally had to restore 4x in one day (no joke), I was a totally noobie and I was having a terrible time LOL. But I got it, I just restored before I updated to 3.0 Jailbreak..that makes it 5x I had to restore in the matter of 10 months....you'll be fine
