My parents were born Italy also. My Dad was born in Bonefro and my Mom in Florence. I grew up in Erie, PA in a very predominant Italian area.

We call it gravy here in Philly

Our tradition is to eat pasta three times week, Tuesday, Thursdays and of course, Sunday! And let not forget about the feast of the 7 fishes on Christmas eve....

Well, I must say it came out awesome!

Boiled the tripe, cut it up into strips and added it to the sauce. Devoured a few bowls of it along with a few loaves of bread.

I must say I do miss the real italian retaurant food back east though. Being in Arizona makes it a bit tough to find those specaial ingredients.
