Tap and hold the icon till it begins to wiggle. An X will appear in the top left corner. Tap the X and it will remove/delete the App.

You just hold down, when you touch the icon you want to move. Put your finger on it and hold it there til they start to shake. It works trust me. I've had 3 of em now.

ps....you can't remove the factory icons.....only downloaded stuff from the app store.

If u have 11 pages of Apps or the max allowed you can place the default Apps on the last page and they will drop off and not be shown and u will only be able to access them via search or jail break the phone and u can also remove the default apps I think?

Folders in 4 dot 0 will be nice tho even if it's just folders to place apps u don't need or use often.
You didn't mention the default apps before and those are a different animal.
Where there's a will there's a way but most of the time is via jail break.

I'm looking forward to the next OS also I just hope the hardware is matched and we don't get the same
    Phone specs again.

    It's time for a change.

or you could just put them on a different page

Here is another solution and I don't think u have to jail break the phone. Its for Windows users only tho.

You can hide the ones that you dont use with.....

How To Hide Icons On Main Menu

Posted by JD Abbey on: February 18th, 2009, 5.50 am

The iPhone came with a few apps that I never use. I don’t use the stocks or the iTunes apps. The Obsessive Compulsive in me was demanding that I remove these icons from the menu. This walkthrough is a quick step by step on how you can hide menu icons of unused programs.
This will only work for jailbroken phones.
    1. Install BossPrefs. This is a app that can be found in the utility section of Cydia.

    2. Open the BossPrefs app.

    3. Tap on the Hide Icons button on the bottom of the BossPrefs screen.

    4. Scroll down the list to find the icon you would like to hide. Tap the ON switch to turn it to off in order to hide an icon for the app.

This does not remove the app from your phone, it merely hides the icon. This is very useful for apps that you cannot remove such as the apps that come installed on the phone from the factory.

If you want to remove them completely, to remove icons from the springboard you can use customize but if its an application like stocks or weather that you know your not going to use there is a way to remove it for good or until you do a restore.
this works for any other app that you want to remove
to remove them you'll need to have a jailbroken iphone
SSH in to the phone with your fav software i use WinSCP (a lot of tutorials recommend it.)
    browse to /private/var/Applications
this is where all of the applications are saved
all you need to do is delete the folder for stocks, weather, the itunes store = mobilestore.app.
and you done it they don't disappear from the springboard restart the phone
