What if your phone is not jailbroken yet and you have 3.0. If you do the upgrade, then you won't be able to do the jailbreak correct?

You can update the carrier file without updating the phone OS. Actually you don't have to update iTunes either while we are at it.
So this file would be used on 3.0.x

Attached is the updated carrier file for Mac

    Mac/OS X Instructions

    1. Download this carrier update file (v5.5)
    2. Close iTunes.
    3. Open the Terminal Application and run this command: defaults write com.apple.iTunes carrier-testing -bool TRUE
    4. Open iTunes
    5. Hold the Alt (Option) key while clicking update under your iPhone in iTunes.
    6. Find your file of the carrier update you downloaded and select it.
    7. Wait for the update. Once it’s done, turn off your iPhone and turn it back on.
    8. Your iPhone is now updated and MMS should be working fine.

    WINDOWS VERSION
    1. Download this carrier update file (v5.5) http://dl.getdropbox.com/u/29849/ATT_US.ipcc
    2. Close iTunes (if it is already open)
    3a. Click Start > Run > type:cmd then press enter. Run this command: "C:\Program Files\iTunes\iTunes.exe" /setPrefInt carrier-testing 1
    3b. (If you're on x64 Windows) Click Start > Run > type:cmd then press enter. Run this command: "C:\Program Files (x86)\iTunes\iTunes.exe" /setPrefInt carrier-testing 1
    4. Open iTunes.
    5. Hold the shift key while clicking update under your iPhone in iTunes.
    6. Change the file type to “iPhone Carrier Configuration files” by clicking in the the bottom right corner and switching to *.ipcc. filetype
    7. Find the file of the carrier update you just saved to your computer in step 1, select it and click open.
    8. Your iPhone is now updated. Make sure to reset your phone, and when it restarts, MMS should be working.

    Thumbs up

I've unlocked my 3Gs. Im using it with T-Mobile. The MMS feature is sweet! I have MMS with T-Mobile so I guess it just carried over.

I Love this MMS feature. And with T-Mobile, I have unlimited text. Sweeeet. Couldn't have done it without Beeshabo's help. I strongly suggest jailbreaking and unlocking. Its worth all the time it takes to learn this entire process. Thanks again man!

Restart the phone, that is required before being able to use the feature.

I just wanted to say thanks again....we rebooted and it worked! He is happy now!

I have a blackberry bold, have been wanting an iphone badly but the non-mms function has been what's stopping me. Is this function available now on the ones you purchase in the store today?

Yes, I was told the new phones going out the door already have 3.1 installed
if by chance they don't you can certainly install it for free
after you plug it into iTunes for the first time.

For those who want Tethering on the 3.0.x OS and would like to install it OTA use this link.

    http://help.benm.at/help.php

You can download the File/profile needed to enable Tethering on the iPhone and it won't interfere with MMS or your current carrier file.

    Note:
If you update to OS 3.1 tethering will not work
